Jean-François d’Elbée is very young restaurant professional. He developed a new formula, halfway between traditional restaurants and fast food.

Diners order their meals in self-service mode. They can chose from 7 different kinds of steam-cooked fish plus a variety of starters, desserts and drinks. Then they are served at their tables.

We showed Jean-François that his original choice of sites for the pilot restaurant was all wrong. We then guided him to a very different site where the local customers are much more likely to become regular patrons.

We also rebuilt his financial model on “yield management” lines. His original model was based on traditional ratios used by most French restaurants but which are increasingly obsolete. They would have caused him to make serious mistakes and miss many good opportunities.
